Healthier Pancakes

If you want fluffy, filling and quick Pancakes, try out these! You only have to mix together all the ingredients in a batch, choose the amount of batter depending on your choice of pancake size and top it with some fruits & syrup if you'd like.


Ingredients:

- 1 cup flour

- 2 tbsp sugar

- 1 tsp baking powder

- 1/2 tsp salt

- 1 cup (dairy free) milk

- 1 tsp vanilla extract

- apx 1-2 tbsp cinnamon

- agave syrup & fruits / nuts for topping (optional)


Steps:

As already mentioned above, throw all the ingredients together in a bowl, whisk until very smooth and choose your size: I chose the smallest cup (1/4), filled it with the batter, heated up a pan on medium and waited until it's hot. Add some olive oil and then some of the batter in the center. When the top starts bubbling, turn the pancake around and heat up a little longer until it's nice and brownish on each sides.

I placed the pancakes on one plate above each other, put slight layers of syrup in between and on top, topped with fruits and almonds. In my opinion you can choose whichever you've at home. I love berries with it. Sometimes dates are yummy, too. Don't underestimate the pancakes though, they're crazy filling. To me, two small ones are the perfect amount to not be hungry anymore.

If you stick with my suggestion, this batter should be enough for about 8-10 pancakes.
