Nourishing Pesto Dressing

Hello sweet soul,

I know I haven't been as active on here but I recently came up with a new dressing / Pasta sauce which is too good not to share. It was delicious as pasta sauce but also as dipping sauce for vegetables. A few ingredients are optional or adjustable regarding the amounts as I know everyone has their own preferences so, listen to your body and enjoy! I threw it all in our blender but if you have a food processor, go for it.

 

Ingredients:

- 1 block pressed Tofu

- 1 Avocado

- 1 cucumber

- 1-2 tbsp olive oil

- Jalapeno (i used 3/4 of a really big one and it added a nice, spicy kick! - Optional)

- 1-2 tbsp of balsamic vinegar

- 2 limes

- about 1 cup of water (depending on preferred thickness, adjust here)

- 4-5 cloves garlic

- 1 handful of spinach or fresh basil if you have it (I was out and it was still delicious without it!)

- Salt & Pepper to taste

 

I will probably play around with it more and maybe update it a bit but this dish made me really happy already as it is.

I also tried to add some tomato on top of my pasta which was pretty good but honestly preferred it without any other toppings.
