My Vegan Tacos

I love simple, affordable, healthy and delicious meals but, who doesn't? So, today I''ll share my favorite taco recipe I created when I was playing around with quick ingredients.
Ingredients:
- Corn Tortillas
- 1 can of corn
- 1 can of black beans
- 1 Avocado
- 1 lime
- 5 cloves of garlic
- salt & pepper
- optional:
- 1 jalapeño
- crushed red pepper
- 2 tbsp hemp seeds
- 2 Tbsp sesame seeds
Steps:
Remove liquid from cans before placing content into a medium large bowl.
Cut the avocado in small chunks and add them to the mixture.
Mince garlic, and press juice out of the lime into the bowl. Add salt & pepper to taste and if you like it a little spicier add a jalapeño and some crushed red pepper to it. I like including some sesame seeds and hemp seeds into my tacos but that's not for everyone. Stir very well!
Heat up tortilla as much as you like: I usually heat up a pan and lay the taco in until it's a little brown and crunchy on both sides, you can also add some olive oil before placing the tortilla inside but I prefer it without.
After heating it up, add apx 1,5-2 Tbsp of the mixture inside the taco so that it's not too full and messy! Fold in half and voilà - you've got yourself a delicious and simple meal!
