Favorite Quinoa Salad

This recipe is from Beth but I adjusted it a little to my preference. It is very healthy, easy and cheap!
I mentioned her in my very first post if you can remember.
I enjoy many of her recipes, definitely check her out!
Ingredients:
1 cup uncooked quinoa
1 large lemon
5-6 cloves garlic
1/4 cup olive oil
1-2 tsp salt
1 large tomato
1 large cucumber
1 bunch curly leaf cilantro
Steps:
- cook the quinoa as suggested and let it cool down completely. For that, you can either let it cool down on the counter top for multiple hours or put it in the fridge for some time. You could eat it warm but in my opinion, it tastes not as good when it's warm.
- Cut veggies in preferred size
- Create the dressing (Lemon, Garlic, Oil, Salt), cut the cilantro as small as possible and put aside separately! Otherwise, the cilantro will get weird. Only add it when everything else is done.
- When cooled off, mix everything together: Quinoa & veggies, later dressing and right before eating the cilantro.
